Our Philosophy

You might say that Joe and Michelle Kopriva – Owners of Snow Creek Larkspur – were born in a barn.

With 6 brothers and sisters, Joe grew up helping out on his family farm in Iowa before earning his electrical engineering degree from Marquette University, where he and Michelle met.

Michelle was raised on a hunting preserve in Iowa before moving to Kansas with her family where they raised cattle and founded the acclaimed Snow Creek Ranch Steaks farm and ranching operation.

After receiving her degree in Business Communications, she and Joe moved to Central Illinois, where Joe worked for the Caterpillar corporation, and Michelle worked as a camp counselor and zookeeper, stoking her love for working with and raising animals in an ethical and sustainable fashion.

After living and working for several years throughout the midwest, Michelle and Joe moved to Colorado where they discovered the property that they would fall in love with and come to call Snow Creek Larkspur.

Thanks to their backgrounds in agriculture and business, Joe and Michelle have learned the value of taking a truly sustainable approach to stewardship of their land, practicing the same sound farming techniques our forefathers practiced to support their families.

Joe and Michelle value education deeply, homeschooling their 5 children, and taking care to ensure that every event they host at their beautiful Douglas County Colorado farm has an educational aspect, so that each visitor goes home with a little greater understanding of how their food comes to the table.

  • To practice sustainable land stewardship & farming practices
  • An emphasis on farm education & improving the skills & self-confidence of all those who attend their classes & events, or board their horses at the farm
  • To operate with honesty & integrity, making sure that every promise is followed through on & every product or event we create is crafted with pride & love
  • To continue the traditions of respect for the land that our forefathers handed down to us by teaching our children – as well as all those who share our bounty – an appreciation of God’s creation
