Our First Farm to Table Catering Event Totally Rocked It

 

Twilight at the Barn Was a Huge Success!


Oh my gosh, things are really picking up here at the farm! Just a couple of weeks ago, we hosted our first farm to table catering event of the season at Snow Creek Larkspur!

And it was such a big success, we can’t wait to repeat it for our August event, which is going to be a more casual and family-friendly picnic!

Since we began hosting these dinners a little over a year ago, we’ve wanted to branch out and to allow our guests to try something a little more adventurous. For this event, our onsite farm to table catering expert Laurie Adams of the Roving Rooster decided to head waaaay south of the border and present a spicy and fun Brazilian-inspired menu.

In keeping with the rustic ranch and farm surroundings, we chose the gaucho (spanish for cowboy!) as our theme.
Our 40 or so guests arrived about an hour before sundown to enjoy our signature caipirinha cocktail (Brazil’s national drink, made with cachaca and muddled lime and berries), with hand-passed Coxinha (a popular savory Brazilian chicken croquette, deep fried and usually served as street food). Next, our servers passed crispy-on-the-outside-gooey-on-the-inside guava-queso melts, which were a unique combination of savory and sweet.

While enjoying cocktails and snacks, visitors were free to roam the ranch feeding the chickens, petting Scout, one of our miniature horses, getting friendly with Pepperoni – our mini zebu steer – and getting to know Joe, Michelle and the kids.

After cocktail hour, guests were seated, Michelle and Joe said Grace, and then introduced Chef Laurie, who described the menu and South American wine pairings. Guests chatted over a savory pea and lemon flan, followed by a soup course – The Roving Rooster’s famous Hearts of Palm Bisque – and a salad of shaved asparagus, tri-colored carrots, and brussels sprouts.

The heart of our meal was mouthwatering Snow Creek Ranch sirloin, with a picante (spicy!) rub made of chiles, garlic and other savory spices, served with the traditional Brazilian accompaniment, a brightly flavored chimichurri and a gorgonzola creme brulee on the side.

Dessert was a rich mascarpone cheesecake, served with coffee and a dulce de leche spoon.

Despite the exotic nature of the menu, nearly all of the ingredients for the delicious meal were locally sourced, in keeping with our desire to provide fresh and exciting farm and fork dining options for Denver and Colorado Springs-area adventurous eaters.

We are truly inspired by the farm to table movement, and its emphasis on wholesome food that’s not only healthy, but good for the environment and delicious. And as Laurie’s farm to table catering success demonstrates, locally sourced food need not restrict a creative chef from coming up with food that’s adventurous, fun, spicy, and enticing!

All in all, the evening was a smashing success, and has really gotten us revved up for the August event I mentioned at the top of the post:

Enjoy hand crafted Snow Creek Ranch Sliders and Farm Ripe Tomato Gazpacho “Shots” upon arrival, paired with cool and refreshing lemonade from our adult and child lemonade stand!.

Then sip and stroll around the property, pet the horses, feed the chickens and find the perfect spot to enjoy your handcrafted picnic, honoring August’s Colorado harvest.
